Temperature is the variable most pour-over gear quietly ignores. Glass, ceramic, and single-wall steel drippers all absorb heat from brewing water rapidly, sometimes dropping the temperature by as much as 15-20°C in the first thirty seconds of a brew, which changes how compounds extract from the grounds and ultimately changes what ends up in the cup. Most people never realize it’s happening because the result is just a slightly flatter, slightly less interesting version of what the coffee could have been. JUNE’s double-wall vacuum structure builds a thermal barrier directly into the dripper itself, maintaining a more stable brewing environment from bloom to drawdown.
